Anyone use $2 chips in the BJ or 3-card poker tables?

Never have seen one of those but I have seen $2.50 chips in the past. I know poker rooms occasionally use uncommon denominations such as $10 and $20 chips.
Presumably because they suit their purpose in a poker room, maybe this is the source of your rogue $2 chips.

I collect chips and one of my favorites is an $11 chip off the red dog table at Fitzgeralds (Reno I think).

WinStar has 50 cent chips and $3.00 chips for BJ.
They had $10.00 chips at one time but I've never seen one. |

Had them down her in Atlantis(Bahamas) for the last 20 odd years which is preferable to the old method of wagering a nickle on the next hand after a BJ!
